Perfect fall entree & easy to make. I used Buttercup Squash (I didn't realize buttercup was a type of squash until I picked one up...I thought they were Butternut??) Like most (all?) of my recipes, this one is open to interpretation....measurements and instructions do not have to be exact. In fact, I forgot about the vegetable broth when I made it and did not put it in until the last step & the soup was blended in the pot.

Recipe Ingredients for Winter Squash & Cauliflower Soup

1 winter squash
1 can vegetable broth
2 cups skim milk
2 cups cauliflower, broke into pieces
1 cup onion, chopped
1 tbs black pepper
1 tbs onion

Recipe Directions for Winter Squash & Cauliflower Soup

  1. Cut winter squash in half

  2. Fill glass baking dish with 1/2 inch of water

  3. Place squash in dish face down

  4. Bake in oven at 400 degrees until skin is easily removable then set aside to cool

  5. In the mean time, put onion, cauliflower, and butter in sauce pan, stirring occasionally, until vegetables are soft

  6. Once squash is cool enough to touch, cut squash into chunks and blend in food processor with all other ingredients until smooth - this may require doing half at a time

  7. Pour soup into sauce pan, reheat, and sir well
