A hearty soup that goes well with homemade bread and apple cider. You can substitute your favorite yellow or orange winter squash for the listed acorn variety.

Recipe Ingredients for Winter Squash Bisque

1 1/2 pounds acorn squash
1/2 cup celery
1 small apple
1 small potato
1 onion
1 carrot
1/4 teaspoon oregano
1/4 teaspoon rosemary
2 cups chicken stock
1/2 cup milk

Recipe Directions for Winter Squash Bisque

  1. Peel the squash and cut into stewable chunks. Peel and core the apple and chunk. Peel the potato and chunk. Chunk the carrot and celery.

  2. Put all ingredients except the milk into a soup pot, bring to a boil, reduce to a simmer and cook until all vegetables are tender, 45 to 60 minutes.

  3. Process by mashing with a potato masher, or run through a blender or food processor. Add milk.

  4. Serve with bread or croutons.
