A nice, vegetarian main dish for fall. I usually serve it with a tomato-basil or spinach salad.

Recipe Ingredients for Winter Squash with Apple-Rice Stuffing

1/2 acorn squash
1/4 cup brown rice (or a mix of brown and wild rices)
1 small apple, chopped
1 stalk celery, chopped
1/2 medium onion, chopped
1 tsp cinnamon, divided
1/4 tsp allspice
3 tsp maple syrup

Recipe Directions for Winter Squash with Apple-Rice Stuffing

  1. Place half an acorn squash (seeds removed) cut-side down on a baking sheet. Bake for 15-20 minutes until tender but not fully cooked.

  2. Cook the rice according to package directions, adding 1/2 tsp cinnamon to the cooking water (you can replace the water with vegetable stock if you prefer).

  3. Saute the apple, celery, and onion. Add the remaining cinnamon and the allspice and cook for another minute.

  4. Turn off the heat and stir in the cooked rice and the maple syrup. Add salt and pepper to taste.

  5. Remove the squash from the oven and fill with the stuffing. Place the squash back on the baking sheet cut-side up and cover with foil. Bake for another 20 minutes or until the squash is cooked through and soft.
