A light but filling soup made with seasonal winter vegetables, and packed with beta carotene.

Recipe Ingredients for winter roasted vegetable soup.

1/2 pound carrots
1/2 pounds parsnips
1 medium sweet potato
1 large yellow onion
1 tablespoon olive oil
1 yellow bell pepper
2 cloves of garlic
1 tablespoon of olive oil
1 salt, pepper to taste

Recipe Directions for winter roasted vegetable soup.

  1. pre heat oven to 450.

  2. cut carrot, parsnips and sweet potato in about 1 inch cubes lay them out on a baking sheet with pam, salt, pepper, and Italian herb blend

  3. Wrap the two cloves of garlic in aluminum and place them on the baking sheet as well.

  4. They should be done in 25-40 minutes.

  5. In the meantime, cut the onion in thin slices or thin squares, and under low-medium heat, caramelize it in a pan with a tablespoon of olive oil and a pinch of salt.

  6. Once the onions are done, 3 cups of water over the onions to warm up a bit.

  7. Once the roasted vegetables are done, place about half of them in a blender with soup of the soup broth and puree until smooth.

  8. Do the same with the other half.

  9. Alternatively, use a food processor or a hand blender.
