Warm, hearty pot roast made with pork shoulder

Recipe Ingredients for Winter Pot Roast

1 tbsp olive oil
2 tbsp butter
3 pound pork shoulder roast, bone-in
1 tsp lemon peel
6 garlic cloves, chopped
1 tsp dried marjoram
1 tsp dried thyme
1 tsp dried oregano
1 tsp pepper
2 cups water
4 bouillon cubes
3/4 cup dried apricots
3/4 cup prunes
1 onion
6 carrots
2 ounces 2% milk
3 ounces white cooking wine
1/4 cup white flour

Recipe Directions for Winter Pot Roast

  1. Preheat oven to 325

  2. Brown the pork roast on each side in the butter and olive oil--about three minutes per side

  3. Boil the two cups water and add the bouillon until dissolved

  4. Add the lemon peel, garlic, and spices to the bouillon/water mixture

  5. Pour mixture over the roast

  6. Cook in pre-heated oven for 90 minutes

  7. Chop carrots in 1-inch chunks, halve the dried apricots and prunes, wedge the onion

  8. Once the 90 minutes are done, turn roast over in the pan and add vegetables

  9. Cook covered for 40 more minutes (until veggies are tender)

  10. Remove roast and veggies to platter

  11. Add 1 cup of water to the juices in the pan

  12. Put pan on burner over medium heat

  13. Mix milk, wine, and flour until smooth

  14. Add flour mixture to pan juices and cook until thickened and bubbly; cook and stir one minute more

  15. Serve over noodles
