Delicious, nutritious, and filling veggie packed soup--variation of a Giada DeLaurentis recipe

Recipe Ingredients for Winter Minestrone

1 cup onion
1 cup carrots
1 cup celery
5 slices bacon
2 garlic cloves
8 ounces swiss chard
1 potato
14 1/2 ounces diced tomatoes
15 oz. great northern beans
1 cup green beans
1 cup red bell pepper
3 1/2 cups low sodium beef broth
2 tablespoons parsley

Recipe Directions for Winter Minestrone

Go to foodnetwork.com and enter recipe title for cooking instructions. I added green beans and red bell pepper. Didn't know how to account for the piece of cheese rind that flavors the soup, since you don't eat it. I also used italian seasoned diced tomatoes.
