Recipe Ingredients for Winter Greens Soup

2 tbsp olive oil
1 onion
1 cup celery
1/2 cup carrots
2 garlic cloves
2 potatoes
5 cups vegetable broth
1/2 tsp dried thyme
4 cups kale

Recipe Directions for Winter Greens Soup

  1. Heat oil in large saucepan. Add onion, celery, carrots and garlic; saute over medium-low heat until onions and celery are soft. Stir in diced potatoes, stock, and thyme.

  2. Rinse kale and pat dry. Stack together and cut greens into very thin shreds and chop. Stir into stock and bring to a boil. Cover, reduce heat, and simmer for 30 minutes or until greens are tender.

  3. Puree in a blender until soup is smooth.
