A wonderful warm soup perfect for the winter time.

Recipe Ingredients for Winter Chicken Minestrone

2 serving Vegetable Bouillon
12 oz Okra
3.5 cup Diced New Potatoes
2.5 cup Diced Tomatoes
1 cup Beans, Navy, Mature Seeds
1 cup Spinach
1 cup, chopped or diced Chicken, Meat Only, Roasted
1/2 oz Dried Porcini Mushrooms
0.5 large Onions
1 package Veggie Pasta
1 serving Shredded Low Moisture Part Skim Mozzarella Cheese
1 oz Bread Crumbs, Dry, Grated, Plain
1 serving Natural Minced Garlic
1 oz Wheat Germ, Toasted, Plain

Recipe Directions for Winter Chicken Minestrone

  1. In a large soup pot make broth using two cubes vegetable bouillon.

  2. Bring to a boil and add can of diced tomatoes.

  3. Drain can of navy beans and put 2/3 can into blender or food processor and blend. Add this mixture and the rest of the whole beans to your broth.

  4. Continue simmering the broth Med/High heat stirring occasionally.

  5. Boil Noodles according to instructions on box, strain, then set aside.

  6. Add two strained cans diced New Potatoes to your broth.

  7. Add generous salt, pepper, dash of minced garlic, and basil to the broth.

  8. Add 1 cup fresh spinach to the broth.

  9. Add 1/2 finely chopped onion to the broth.

  10. Add finely diced green onions to the broth.

  11. Add 1 ounce bread crumbs and 1 ounce wheat germ to the broth (will thicken it and add fiber)

  12. Add 1 serving shredded mozzerella cheese to the broth.

  13. Broth should still be simmering on Med/High heat - continue to stir occasionally.

  14. Add dried Porcini mushrooms to the broth (adds exquisite flavor!)

  15. Add pulled chicken meat from roasted chicken (I buy mine whole and pre cooked at the grocery store)

  16. After soup has been simmering on Med/High heat for about 1 hour (stirring occasionally) add in your noodles and continue to simmer/stir for 30-60more minutes.

  17. Serve HOT.

  18. This soup is very thick when I make it, but simply make more watery broth if you prefer your soup to be thinner.
