This recipe is perfect for a cool evening and is an easy soup to make. make sure to use all the leaves from the celery, use at least one full bunch. In France, they'd also use 1-2 celery roots (remove skin and chop into dice-sized pieces) but I don't usually bother to shop for it. I use whatever onion family is in the fridge. You could use leeks or regular onions. Use lots. I use small flavorful potatoes like small red potatoes, or Yukon gold. These numbers are more of a guide-I don't know how many servings it makes! fill up the pot. I'm sure there are at least 14 bowls in my 12 qt pot... The amounts are a guide to start with. I have a huge pot- and I keep adding vegetables till it's "full". Generally I use at least 2-3 quarts broth, a small sack of small potatoes, and 1-2 heads of celery. If available, I add celery root. You can serve this with some crusty warm whole grain bread, and some grated gruyere cheese. And a glass of wine.

Recipe Ingredients for Winter celery soup

2 lbs celery
3 leeks
2 lbs potatoes
3 cloves garlic
2 tbsp olive oil
1 tsp black pepper
2 tsp thyme
1 tsp oregano
2 quarts chicken or vegetable broth
1 quart water

Recipe Directions for Winter celery soup

  1. Crush the garlic and warm it with the olive oil in a huge soup pot. Clean and slice the leeks, then melt them in the pot with oil.

  2. Start cleaning and chopping the potatoes and celery. When onions turn clear and begin to get brown, add the broth and the potatoes. Turn the heat to high. When done chopping celery, add it to the pot. Add the seasonings and adjust to your taste. Add enough water to bring up the volume, but not overly dilute the flavor.

  3. The soup's done when potatoes are tender.
