Hearty soup. Vegetarian variation - use crumbles instead of ground beef, which requires sauteing of onion and celery in oil or water; use vegetable broth instead of beef bouillon.

Recipe Ingredients for Winter Cabbage and Beef Soup

1/2 medium onion
2 stalks celery
1 pound lean ground beef
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon Tabasco
1 tablespoon fresh oregano, chopped
15 ounce beans (pinto or black are best)
3 cups chopped cabbage
28 ounce diced tomatoes
5 cup beef bouillon
6 ounces tomato paste

Recipe Directions for Winter Cabbage and Beef Soup

Brown ground beef. Chop onion and celery and add to meat and cook for about 7 minutes. Add rest of ingredients (drain and rinse beans) and bring to boil. Reduce heat and simmer for one hour.
