Wheat-free cookies, or omit the parsnip puree and make it into granola.

Recipe Ingredients for Winco Power Cookies

4 cup Regular Rolled Oats
15 oz Sweet Peas
1/2 cup Sugars, Granulated
1/2 cup, packed Sugars, Brown
1 tsp Vanilla Extract
1 teaspoon Baking Powder
1 tsp Baking Soda
1 tsp Cinnamon, Ground
1/2 cup Chopped Dates
4 oz Sweetened Flaked Coconut
1/2 cup (not packed) Raisins, Seedless
1/2 cup, sliced Mangos
1/2 cup slices Parsnips

Recipe Directions for Winco Power Cookies

  1. Preheat oven to 325 deg. Grease cookie sheets. Grind oats in a blender until resembling coarse flour.

  2. In a medium bowl, mash cannellini beans (peas) into a smooth paste. Stir in the white sugar, brown sugar and vanilla until well blended. Combine the ground oats, baking powder, baking soda and cinnamon; blend into the bean mixture. Stir in the dates, coconut, raisins, walnuts and mango. This is where you would spread it into a 9X13 and cook it into granola, but if you're making cookies, add in the parsnip puree or applesauce. The batter is still crumbly, so I mash it into a spoon, drop it on the cookie sheet and mash it again.

  3. Bake for 10-15 minutes in preheated oven until golden, about 10-15 minutes. Cool on baking sheets for 5 minutes then remove to wire racks to cool completely.
