Recipe Ingredients for Wilted Spinach Salad

7 oz baby spinach leaves (about 7 cups)
1 pear (cut into 1/2" cubes about 2 cups)
1/3 cup blue cheese, coarsely crumbled (about 3 oz)
6 medium slices bacon, cooked
2 tbs red wine vinegar
2 tbs honey mustard
1 tbs extra virgin olive oil

Recipe Directions for Wilted Spinach Salad

  1. In large serving bowl, combine spinach, pear and cheese; reserve;

  2. In skillet, over medium-high heat, cook bacon until crisp, about 5 minutes. Transfer to paper towel, leaving fat in skillet. Whisk vinegar, mustard and oil into pan drippings until blended.

  3. Pour warm vinegar mixture over salad; toss to coat. Sprinkle with crumbled bacon.
