Wonderful way to cook spinach and give it great flavor. Excellent as a snack or side.

Recipe Ingredients for Wilted Spinach Salad (Hot Dish)

2 cups Baby Spinach
2 ounces Red Onion
1/4 large Red Bell Pepper
1 tsp Lemon Zest
1 tbsp Lemon Juice
1 tsp Extra Virgin Olive Oil
2 tbsp fresh basil
1 pinch Cracked Black Pepper

Recipe Directions for Wilted Spinach Salad (Hot Dish)

  1. Prepare: Zest & Bail, and slice onion and pepper into 1/8 - 1/4" thick pieces.

  2. Bring a pan with the oil to high heat. Turn heat to medium.

  3. Place onions, lemon zest and peppers in pan and saute until onions start to release their juices (NOT mushy).

  4. Add basil, spinach, and lemon juice until spinach is just wilted. You have over cooked if the basil turns black.

  5. Plate and pepper to taste.
