Recipe Ingredients for Wilted Kale Salad

8 c chopped kale
3/4 c craisins
6 oz sliced shallots
4 cloves garlic
1/2 c roasted almonds
1 c pitted olives, chopped
3 T lemon zest
1/4 c olive oil

Recipe Directions for Wilted Kale Salad

  1. thinly slice shallots, press garlic, let sit in pan in oil to infuse

  2. clean and slice kale into 1/2 inch ribbons, crosswise

  3. chop almonds, olives, craisins, and zest lemon

  4. warm and soften shallots and garlic in oil over medium low heat.

  5. when shallots are sweated, add almonds, olives, craisins to soften and warm

  6. add kale and lemon zest, wilt

  7. serve
