Recipe Ingredients for Wilted Greens and Blackeye Peas

3/4 pounds collard greens, fresh, sliced into 1-inch strips
2 tsp vegetable oil
1 slice turkey bacon, diced
4 ounces blackeyed peas, rinsed and drained
1/2 tbsp red wine vinegar
1 salt and pepper to taste

Recipe Directions for Wilted Greens and Blackeye Peas

  1. Heat oil in a very large skillet over high heat. Add turkey bacon and sauté until lightly browned, about 2 minutes.

  2. Add greens and cook, stirring constantly, until wilted, about 5 to 10 minutes. Add a little water, if needed.

  3. Add the blackeyes and heat through. Season with vinegar, salt and pepper.
