Healthy soup, 45 minutes to make, 15 minute prep

Recipe Ingredients for Wild Rice and Split Pea Soup

1 tsp oil
3 small red onion, diced
2 carrots, diced
360 g button mushrooms, sliced
3 garlic cloves
6 cups water
1 l chicken broth
400 g split peas (yellow or green)
4 medium potatoes, diced
100 g brown rice
3 tbsp dried parsley
3 tsp dried oregano
1 1/2 tsp black pepper
2 tsp salt
150 g chicken breast raw

Recipe Directions for Wild Rice and Split Pea Soup

  1. Sauté onion, garlic and mushrooms (and chicken) in oil.

  2. Stir in water, split peas, carrots, potatoes, herbs and rice. Bring to a simmer. Reduce heat to a simmer and cook until peas are tender.

  3. Serve hot with some crusty bread.

  4. You can reduce potatoes by half or skip to avoid carbs. Vegeatarians can replace chicken broth with veggie boullion, and skip the chicken breast.
