These stuffed 'bellas are vitamine packed, high in fiber and iron, and really really tasty.

Recipe Ingredients for wild rice and spinach stuffed portabella mushrooms

200 grams Spinach
1/4 cup Wild Rice, Cooked
3/4 cup Rice, Brown, Medium-grain, Cooked
15 grams Extra Virgin Olive Oil
2 med Sun Grill-a-Bella Mushroom Caps
1 oz Chavrie Goat Cheese
1 serving trader Joe's Crushed Garlic

Recipe Directions for wild rice and spinach stuffed portabella mushrooms

  1. Cook the brown and wild rice together in two cups of water on low heat for about 40 minutes or until all of the water is absorbed.

  2. Remove the stems from the mushrooms and brush or drizzle the mushroom gills with the olive oil. Season the mushroom with salt and pepper.

  3. Place the mushrooms into a broiler or oven, gills up for about five minutes.

  4. Mix together the cooked rice, goat cheese, crushed garlic, and cooked spinach (roughly chopped) in a bowl.

  5. Stuff the heated mushrooms with equal parts of the rice and spinach mix and return the mushrooms to the oven or broiler for 20 to 25 minutes until heated through.

  6. (optional: top with blue cheese, gorgonzolla cheese, crumbled goat cheese, or parmasiano before baking the stuffed 'bellas").
