Creamy and delicious. I cheat by using 1 package of Uncle Ben's prepared wild rice - saves on cooking time and dirty pans!

Recipe Ingredients for Wild Rice Soup

1 cup uncooked wild rice
4 1/2 tablespoons olive oil
1 tablespoon onion, minced
1/2 cup flour
3 cups fat free chicken broth
3/4 cup ham, diced
1 cup carrots, shredded
1 cup evaporated skim milk

Recipe Directions for Wild Rice Soup

  1. Cook rice according to package directions.

  2. Heat olive oil in large pot pan and saute onion until tender.

  3. Blend in flour until smooth, then add chicken broth gradually, stirring until smooth.

  4. Stirring constantly, bring to boil.

  5. Reduce heat to low and mix in rice, ham and carrots. Cook about 5 minutes, until heated through.

  6. Blend evaporated skim milk into soup just before serving.
