Creamy Soup with Wild Rice and Chicken

Recipe Ingredients for Wild Rice Soup

1/4 cup Canola Oil
1 cup Chopped Onion
1 cup shredded Carrots
1/4 cup Whole Grain Flour
4 cups Water
3 bouillon Cubes
3 cups cooked Wild Rice
3 cups cooked chicken breast
2 cups Half and Half

Recipe Directions for Wild Rice Soup

  1. Heat 2 cups of the water and dissolve bouillon cubes in the water to make broth.

  2. In Large Sauce Pan, heat oil and add chopped Onions and carrots. Saute the vegetables until tender.

  3. Stir flour into vegetable and oil mixture until well combined.

  4. Add broth, extra 2 cups of water, rice, and chicken to Vegatable mixture. Bring to boil, then turn down heat and simmer covered for 15 minutes.

  5. Stir in half and half and keep cooking until heated through and Serve. (only cook a couple more minutes once you add the half and half- do not boil.
