Recipe Ingredients for Wild Rice, Snap Pea and Cheese Salad

1/2 cup wild rice
3/4 cup water
1 1/2 cups sugar snap peas
1/4 cup golden raisins
2 oz. queso blanco, diced
2 tbsp. extra virgin olive oil
1 tsp. white wine vinegar
1/8 tsp. kosher salt
1/8 tsp. black pepper

Recipe Directions for Wild Rice, Snap Pea and Cheese Salad

  1. Cook rice in water until fully absorbed. Place in bowl. Add snap peas, raisins, vinegar, salt, pepper, and 1 tbsp. of oil.

  2. In saute pan, heat remaining oil over medium high. Add cheese and fry until a crust forms, tossing frequently. Add to other ingredients; toss and serve
