Recipe Ingredients for Wild Rice & Sausage Stuffing

1 cup Lundberg wild rice blend
2 cups reduced sodium chicken stock
1 cup water
325 g bulk pork sausage meat (actually use a 375 g pack; you'll be draining at least 50 g of fat)
1 tbsp. oil
1 tbsp. butter
2 onions, diced
2 apples, peeled and diced
1 tsp. ground sage
1 tsp. thyme
1 salt and pepper, to taste

Recipe Directions for Wild Rice & Sausage Stuffing

  1. Combine the rice, chicken stock and water in a saucepan. Bring to a boil, cover and simmer for about 1 hour, or until rice is well cooked and has absorbed all the liquid.

  2. While rice is cooking, brown the sausagement (375 g) in a frying pan. Drain as much fat as possible. Transfer sausage to a plate and use paper towel to further de-grease.

  3. Wipe pan clean then add oil and butter. Once butter is melted, add apples and onions. Cook until tender.

  4. If the frying pan is big enough, return sausage to it then add the herbs and the cooked rice. If the pan is too small, combine everything in a large bowl. Mix well.

  5. The stuffing can be served as-is or put in a baking dish and baked at 350 F (180 C) for about half an hour to give it a nice crispy crust on top.
