Wild rice is such a visually spectacular food, with the fresh diced pepper and zingy dressing it tastes spectacular too. From Green Cuisine Cookbook 2006.

Recipe Ingredients for Wild Rice Salad (Vegan)

1 cup corn
2 cups water
1/3 cup wild rice
1/3 cup brown basmati rice
1/2 cup parsley, finely cut
2 green onions, finely cut
2 tbsp cilantro, 6 sprigs, copped
1/3 red pepper, diced
1/8 cup olive oil
2 1/2 tbsp Lemon juice
1/4 cup salsa
3/4 tsp salt
1 garlic clove, minced

Recipe Directions for Wild Rice Salad (Vegan)

  1. Boil the corn in the water for 5 minutes and then scoop it out and cool it.

  2. Add the basmati rice to the cooking water and simmer for 35 minutes.

  3. Place rice in a bowl to cool.

  4. Mix the dressing ingredients and then combine all ingredients together.
