Healthy, yummy pancakes - great for breakfast. Can freeze and toast in the morning.

Recipe Ingredients for Wild Rice Pancakes

2 cups Cooked wild rice
1 cup Flour
1 tsp baking powder
1/2 tsp salt
1 tsp sugar
2 Organics Eggs Large
1/4 cups oil
1 cup milk (or milk alternative)

Recipe Directions for Wild Rice Pancakes

  1. In a bowl combine rice, flour, baking powder, salt, sugar and mix.

  2. Add remaining ingredients and mix well. Cover and refrigerate for 1-3 hours (though, I forgot to do this and they turned out good).

  3. Heat oil in skillet on medium heat.

  4. Drop 1 heaped tsp of batter and gently flatten. Flip when edges are brown.
