An Aboriginal version of Pancakes, eaten alone or with syrup and berries. Often eaten as a mid-day snack.

Recipe Ingredients for Wild Rice Pancakes

2 cups cooked wild rice
1 cup rice Flour
1 tsp baking powder
1/2 tsp salt
1 tsp sugar
2 large Eggs
1/4 cup vegetable oil
1 cup soy milk (or milk alternative)

Recipe Directions for Wild Rice Pancakes

  1. In a bowl combine rice, flour, baking powder, salt, sugar and mix.

  2. Add remaining ingredients and mix well.

  3. Cover and refrigerate for 1-3 hours (though, I forgot to do this and they turned out good).

  4. Heat oil in skillet on medium heat.

  5. Drop 1 heaped tsp of batter and gently flatten. Flip when edges are brown.

  6. *You can buy the wild rice in the rice section, not organic section of a grocery store. It's a completely black rice. It looks expensive because it's a small bag, but the rice expands a lot when cooked.
