I tried to come up with a more healthy wild rice dish than the creamy soups and casseroles I normally make.

Recipe Ingredients for Wild Rice w/mushrooms and spinach

2 cups wild rice
4 cups beef broth
2 cups water
16 oz spinach
1 cup red wine vinegar
2 cups sliced mushrooms
1 tsp tarragon
1 tsp marjoram
1/2 tsp salt
1/2 tsp black pepper
1 cup pecans

Recipe Directions for Wild Rice w/mushrooms and spinach

Cook wild rice in water and beef broth, bring to a boil and then simmer for about 40 minutes. Add vinegar, mushrooms, spinach and spices. Simmer until spinach is well wilted. Add pecans at the end. This is good warm or cold. Almonds are good also. spices approximate, adjust to taste.
