Recipe Ingredients for wild rice, corn and sausage soup

8 oz Wild Rice
8 serving Cooking Stock
7 cups Corn, Sweet, Yellow
12 oz Chorizo Sausage
3 medium Carrots
2 medium (2-1/2" dia) Onions
8 oz heavy cream

Recipe Directions for wild rice, corn and sausage soup

  1. While the corn is defrosting, cook wild rice in chicken stock according to package directions until it is tender.

  2. Combine 3 1/2 cups defrosted corn with 1 cup chicken stock blend to a fine puree in a food processor, blender or use and immersion blender.

  3. Mince carrots, finely chop onion.

  4. Dice Chorizo, or other smoked, pre-cooked spicy sausage.

  5. Cook Chorizo in large heavy pot over medium high heat until beginning to brown.

  6. Add carrots and onions to Chorizo and cook for an additional 3 minutes or until tender.

  7. Add remaining broth to Chorizo veggie mixture and cook for 15 minutes.

  8. Add wild rice, corn and corn puree and cook for another 15-20 minutes to let the flavors blend.

  9. Salt and pepper to taste.

  10. Serve over hot soup over spinach or arugula. If you want to make it a meal top with a thinly sliced cooked chicken breast.

  11. Calories are for a 1 cup serving.
