Recipe Ingredients for Wild Rice Casserole

1 cup raw wild rice
1 onion
1 tbsp chopped black olives
14 oz diced tomatoes
1 cup water
1/2 tbsp olive oil
4 oz canadian bacon
1 cup shredded light mozzarella cheese

Recipe Directions for Wild Rice Casserole

Chop onion. Cook in oil until clear. Add tomatoes and olives. Simmer until warm. Add salt to taste. Put wild rice and bacon in casserole dish, and add tomato mixture. Add water and stir to mix. Put cheese on top. Do not cover. Bake at 350 for about an hour or until rice is cooked and water absorbed.
