A great light summer rice salad and wonderful for using left over chicken.

Recipe Ingredients for Wild Rice & bean salad

6 oz Wild Rice, prepared & cooled
16 oz Kidney beans, drained & rinsed
2 c. chicken breast, diced
1 tomato, cubed
4 1/2 oz green chilies
1/2 c. onion, diced
1/2 green pepper, diced
1/4 c. lime juice
1/4 c. olive oil

Recipe Directions for Wild Rice & bean salad

Prepare wild rice according to box instructions and then add the rest of the ingredients. In a separate bowl combine oil & lime juice. Pour over the salad and mix. Best if chilled overnight.
