From the Wild oats website...can't go wrong with their recipes. The original recipe calls for 1.25 cups grapeseed oil...but I have reduced this quite a bit in the spirit of lowering calories. In original form it was between 360-400 calories per serving with nearly 40 grams of fat. So this is my compromise. Of course you could mix it up as originally directed and then only use a fraction of the sauce to coat the salad.

Recipe Ingredients for Wild Oat's Apple and Blue Cheese Coleslaw With Toasted Walnuts

1/2 cup canola oil or grapeseed oil
1/3 cup apple cider vinegar
1 tablespoon Dijon mustard
2 tablespoons honey (actually calls for agave nectar )
2 tablespoons sweet onions, minced
1/2 teaspoon thyme
1 salt and black pepper, to taste
16 oz cabbage, shredded
1 granny smith apples, thinly sliced
1 large carrot, shredded
6 green onions, finely diced
1/3 cup walnut pieces, toasted
1/3 cup blue cheese or gorgonzola, crumbled

Recipe Directions for Wild Oat's Apple and Blue Cheese Coleslaw With Toasted Walnuts

  1. Place first six ingredients in a blender; pulse to combine.

  2. Add salt and pepper to taste.

  3. Refrigerate until ready to use.

  4. Combine cabbage, apples, carrots and green onion.

  5. Toss with just enough dressing to coat. Season with salt and pepper.

  6. Refrigerate for at least 2 hours before serving.

  7. Add walnuts and blue cheese before serving.
