Recipe Ingredients for Wild About Mushrooms

3/4 lb fettuccine
1/4 cup butter
1 lb mushrooms, sliced
8 oz portabella mushroom, sliced
1 large onion, cut into wedges
1 tsp dried thyme leaves
1/2 tsp salt
1/2 tsp pepper
2 tbsp all purpose flour
1 1/2 cups chicken broth
1 cup whipping cream
4 oz goat cheese, crumbled
1 cup parmesan cheese, shredded

Recipe Directions for Wild About Mushrooms

  1. Heat oven to 400. Spray 3 quart casserole dish with cooking spray.

  2. Cook and drain fettuccine according to directions on package. Meanwhile, in a 12 inch non-stick skillet, melt butter over med-high heat. Cook mushrooms, onions, thyme, salt and pepper in butter 10 minutes, stirring occasionally, until tender. Remove from heat. Stir in flour; gradually stir in broth. Heat to boiling; boil 1 minute. Remove from heat; stir in whipping cream.

  3. Add cooked fettuccine to skillet; toss. Add goat cheese; toss gently. Spoon into baking dish.

  4. Cover; bake 15 minutes. Uncover; sprinkle with parmesan cheese. Bake 10 to 15 minutes more or until heated through and bubbly.
