Serves 4 as a meal, 6-8 as a side dish.

Recipe Ingredients for Wild mushroom rice with chickpeas and sundried tomatoes

1 cup long grain brown rice
1/3 cup sundried tomatoes
1/3 c dried wild mushrooms
2 c canned chickpeas
1/2 red onion, finely chopped
3 cloves garlic
1 1/2 c water
1 tbsp olive oil
1/2 cup low fat cheddar
2 tbsp parmesan
1 tbsp dried basil

Recipe Directions for Wild mushroom rice with chickpeas and sundried tomatoes

  1. Soak mushrooms in 1 1/2 cups warm water, and sundried tomatoes in 1 cup warm water, for ~20 minutes. Remove mushrooms (chop finely) and sundried tomatoes (chop coarsely), and retain soaking water.

  2. In a medium saucepan, combine olive oil, 2 tbsp of tomato-mushroom water, onions, and garlic. Cook ~7 minutes, until onions are golden. Preheat oven to 350F.

  3. Add rice and stir, until it is toasted.

  4. Add basil, mushrooms, tomatoes, and soaking liquid, and bring to a boil.

  5. Rinse chickpeas well, and transfer to 8x8 baking dish. Add mixture from saucepan. Cover tightly with tinfoil, and bake in oven until water has been soaked up and rice is tender, ~40 minutes. (Note that mine took closer to 1.5 hours, and required the addition of extra water.)

  6. Sprinkle with cheese, and return to oven for 1-2 minutes, until cheese is melted.
