Made with a prebaked 12-inch pizza shell. Use mixed mushrooms like cremini and portobello. Use homemade hummus. From Eat Shrink and Be Merry!

Recipe Ingredients for Wild Mushroom Pizza

2 3/4 cups canned tomatoes
2 tbsp olive oil
1/2 sliced red onion
1 tsp minced garlic
4 cup mushrooms
1/2 tsp dried thyme
3/4 cup hummus
1/4 cup parmesan cheese
3 oz light mozzarella cheese

Recipe Directions for Wild Mushroom Pizza

  1. Preheat oven to 425

  2. Drain tomatoes to remove as much liquid as possible.

  3. Heat olive oil in a large non-stick skillet over medium heat. Add onions and garlic. Cool until onions have softened. Add mushrooms and cook 5 more minutes. Stir in thyme, salt and pepper. Cook 1 more minute - remove from heat.

  4. Spread 3/4 cup of homemade hummus over pizza crust, top with drained tomatoes. Sprinkle with parmesan cheese. Spread the mushroom mixture over the cheese and tomatoes followed by the mozzarella.

  5. Place pizza on middle rack and bake for 10 -12 minutes or until cheese is completely melted adn edges are lightly browned. Remove from oven and let cool for 1 minute before slicing.
