A delightful heart-healthy version of a rich soup. Sprinkle on a little chopped parsley for additional color.

Recipe Ingredients for Wild Mushroom and Leek Soup

1 oz dried chanterelle mushrooms
4 leeks
4 tbsp extra virgin olive oil
1/4 cup Marsala or Madeira
3 cups low-fat chicken broth
1 cup fat-free half and half
1 dash of ground nutmeg

Recipe Directions for Wild Mushroom and Leek Soup

  1. Reconstitute mushrooms.

  2. Cut off roots and green tops of leeks. Split white portion lengthwise and wash to remove sand. Coarsely chop.

  3. In 2 qt. saucepan, heat oil over medium-high heat. Add leeks; saute until tender, about 15 minutes, stirring often. Add Madeira; cook 1 minute more.

  4. Stir in broth and mushrooms and bring to a boil. Reduce heat and simmer, covered, for 30 minutes or until mushrooms are tender.

  5. Reserve a few mushrooms for garnish. Puree the soup in a blender or food processor and return to pan. Stir in cream and nutmeg. Heat through and serve, garnished with mushrooms.
