The frittata is a popular dish in Tuscany. Topped with wild muchrooms and a fresh herb salad, this version makes an elegant low-carb meal.

Recipe Ingredients for Wild Mushroom Fritatta

6 ounces wild mushrooms, cleaned and sliced
2 tablespoons olive oil, divided
1 clove garlic, chopped
1 teaspoon thyme, chopped
3 large eggs,
4 ounces Swiss cheese or Gruyère, grated
2 green onions, thinly sliced
1/2 cup fresh parsley, chopped
1/2 cup fresh mint, chopped
1/2 tablespoon lemon juice
1 tablespoon olive oil
1 salt and pepper, to taste

Recipe Directions for Wild Mushroom Fritatta

  1. Position oven rack 8 inches from broiler heat source; preheat broiler. Heat 1 tablespoon of the olive oil in 8-inch-diameter nonstick ovenproof skillet over medium-high heat. Add mushrooms and sauté just until golden, about 4 minutes. Reduce heat to medium. Stir in garlic and thyme. Cook until mushrooms are tender, about 6 minutes longer. Remove from pan and reserve.

  2. In the same pan, heat the remaining 1 tablespoon of olive oil. Pour in the beaten eggs; season lightly with salt and pepper and stir gently with a wooden spoon about 2 minutes or until eggs begin to set.

  3. Remove from heat and scatter the cheese on top and place in the oven. Broil until mixture is just set on top and just cooked through, about 2 minutes. Cool 2 minutes. Run spatula around sides of skillet to loosen frittata. Place a plate atop skillet. Invert the frittata onto the plate. Arrange the mushrooms and green onions on top.

  4. Mix the herbs in a small bowl and toss with the lemon juice and olive oil. Season with salt and pepper. Place on top of the fritatta.
