Recipe Ingredients for Wild Mushroom Curry

4/5 lb cremini mushrooms, sliced
2 portobello mushrooms, sliced
2 carrots, peeled and sliced
1 tbsp vegetable oil
2 tbsp red curry paste
1 yellow onion, thinly sliced
1 yellow bell pepper, sliced into strips
1/4 c tamari
3 tbsp lime juice
14 oz lite coconut milk
14 oz coconut milk
1/2 tsp ground turmeric

Recipe Directions for Wild Mushroom Curry

  1. Clean the mushrooms by brushing off any excess dirt with a towel or pastry brush. If the mushrooms are especially dirty, quickly rinse them under running water, and let dry for several hours on paper towels.

  2. Cut the carrots in half lengthwise, and then cut each half into 1/4-inch slices at a sharp angle.

  3. Stir-fry the vegetables. Heat the oil in a wok or large skillet over high heat. Add the carrots and curry paste, and cook for 1 minute. Add the onion, mushrooms, and bell pepper, and stir-fry for 3 more minutes.

  4. Add the seasoning and coconut milk. Add the tamari, tamarind concentrate (or lemon/lime juice), 1 can of the coconut milk, and turmeric. If you want the curry to be soupier, add the coconut milk from the second can until it's the consistency you want. Bring to a boil, remove from the heat, and serve.
