Roasted butternut squash cubes mixed with wild rice and sauteed onion.

Recipe Ingredients for Wild Butternut Pilaf

170 grams Wild Rice
1/2 cup Rice, Brown, Medium-grain
4 cups Squash, Winter, Butternut
1 tbsp Sea Salt
1 Pam cooking Spray
1 large onion, sauteed
1/2 cup slivered almonds, toasted
1 cup mushrooms, sliced

Recipe Directions for Wild Butternut Pilaf

  1. Cook rice according to instructions on package.

  2. Peel, seed and chop butternut squash into small 1/2" cubes.

  3. Place squash on flat cookie tray in 400 degree oven, spraying liberally with Pam and then sea salt.

  4. Sautee onion and mushroom while rice and squash cook.

  5. Mix all together, sprinkling with toasted almonds and serve.
