Recipe Ingredients for Wiener Schnitzel

4 chop, excluding refuse (yield from 1 raw chop, with refuse, weig Pork, Fresh, Loin, Center Rib (Chops), Boneless
2 extra large Egg, Whole
0.75 cup Gold Medal All Purpose Flour
0.25 tsp Salt, Table
0.25 tsp Pepper, Black

Recipe Directions for Wiener Schnitzel

  1. Working one at a time, place the chops between two pieces of plastic wrap and pound flat to about inch thick. Set aside.

  2. Beat the eggs well and pour into a shallow dish or baking pan.

  3. In another shallow dish or baking pan place flour, salt, and pepper and mix well to thoroughly combine flour and seasonings.

  4. Meanwhile, heat inch of oil or lard in a deep skillet. Oil should be 350 degrees F.

  5. Dredge the first cutlet in flour, making sure that it is completely coated.

  6. Dip the cutlet in the egg to coat it.

  7. Dredge the cutlet in the flour a second time, coating thoroughly, and quickly transfer to the skillet.

  8. Fry each cutlet until golden brown, about 2-3 minutes per side. Do not let them stick to the pan.

  9. Remove the cutlet from the oil and drain on paper towels or paper bags. Sprinkle immediately with a little salt.
