A hearty fish and potato stew traditionally made with sardines; I've chosen salmon instead.

Recipe Ingredients for Widowed Potatoes With Salmon

2 tbs. olive oil
1 small onion, diced
1 med. green bell pepper, seeded and diced
8 cloves garlic or 1 bulb. roasted
14 1/2 oz. diced tomatoes
8 cups potatoes, diced
6 oz. salmon, drained
2 cups water
1 tbs. paprika
1 ground black pepper to taste

Recipe Directions for Widowed Potatoes With Salmon

  1. Set oven at 400 degrees F

  2. Slice the top off a bulb of garlic exposing most of the cloves, drizzle with olive oil, wrap tightly in foil and bake for 40 mins. Allow to cool to room temperature.

  3. In a Dutch oven, saute onion and green pepper in olive oil until soft.

  4. Add tomatoes with their juices, potatoes, garlic, spices, and water and simmer until potatoes are tender.

  5. Potatoes will reduce by 1/3 to 1/2 and most of water will be absorbed.

  6. Add drained salmon and heat through;break up any large chunks.
