Chicken Breasts in a creamy sun-dried tomato sauce

Recipe Ingredients for Wicked Chicken

2 tbsp Extra Virgin Olive Oil
24 ounces Boneless Skinless Chicken Breast
1/2 tbsp Kosher Salt
1/2 tbsp Ground Black Pepper
1/2 cup minced Shallots
1/4 cup White Wine
7 ounces Sun-dried tomatoes, finely chopped
1 tbsp finely chopped Thyme
1 1/2 cups Chicken Broth
1/2 cup Half and Half

Recipe Directions for Wicked Chicken

Heat Oil in a skillet over medium heat. Season chicken with salt and pepper and brown in skillet on each side. Transfer breasts to a roasting pan. In the same skillet, cook shallots until soft, about 5 minutes. Add wine and cook til reduced by 2/3. Add sun-dried tomatoes and thyme and cook for 5 minutes longer. Add broth and cook for 10 minutes or until reduced by 1/2. Add half and half and bring to a simmer. Pour mixture over chicken in the roasting pan and bake for 20 minutes. Serve hot.
