Nothing but guac! No nasty mayo, thank you. No canned tomatoes or jalapenos, either -- just the freshest, healthiest ingredients. Spice it up by adding more jalapenos or a dash of green Tabasco and serve with whole grain tortilla chips.

Recipe Ingredients for Wholly Guacamole! from Tucker House B&B

6 tbsp. white onion, finely chopped
2 Tbsp.jalapeno chiles, seeded and finely chopped
2 cloves garlic, minced
1/2 cup fresh cilantro, packed and finely chopped
2 avocados, halved, pitted and peeled
1 large tomato, finely chopped
1 tbsp. lime juice, fresh
1 Sea salt to taste

Recipe Directions for Wholly Guacamole! from Tucker House B&B

  1. In a medium bowl, mash 4 tablespoons of the onion, the chiles and the garlic with a pestle or a fork to form a coarse paste. (OR, you can use a food processor or 'mini-prep' machine to do this job.

  2. Add the avocado and, using a fork, mash until well incorporated. (Do NOT use a food processor for this step; it's overkill for the avodacos.)

  3. Stir in all but 2 tablespoons of the tomato and all of the cilantro and lime juice. Season to taste with sea salt.

  4. Let stand a few minutes before serving. Sprinkle the quacamole with the remaining onion and tomato and serve with chips.
