Recipe Ingredients for Wholesome, hearty penne!

60 grams penne, wholewheat
75 grams capsicums, red, cut into small pieces
75 grams capsicums, green, cut into small pieces
1 clove garlic, finely chopped
1/2 tbsp shallots, ringed
50 grams cherry tomatoes, cut into quarters
1 tsp olive oil
1 1/2 tbsp parmesan cheese, grated
1/4 tsp oregano
1/4 tsp basil
1 salt
1 pepper

Recipe Directions for Wholesome, hearty penne!

  1. Boil the penne with a pinch of salt for 15 - 20 min, drain well.

  2. Heat 1/2 tsp olive oil on saucepan, add in half the amount of garlic.

  3. Stir garlic for a min, throw in penne to stir for about 4 min, put aside.

  4. Add salt and pepper and some herbs 9optional) to taste.

  5. In a large bowl, mix 1/2 tsp olive oil with the rest of garlic, salt and pepper and herbs.

  6. Pour all veggies in and mix well.

  7. Mix up the veggies and penne.

  8. Sprinkle the dish with parmesan.

  9. Serve
