High fibre muffins that provide a good start to the day

Recipe Ingredients for Wholesome breakfast muffins

1 c whole milk
2 T lemon juice
1 egg
2 T butter
2 T corn syrup
2/3 c raisins
1/2 c chopped walnuts
3/4 c wheat bran
3/4 c flax meal
2/3 c fresh cranberries (optional)
1 c whole wheat flour
1/2 c brown sugar
1/2 tsp salt
1/2 tsp baking soda
2 tsp baking powder
2 mashed bananas

Recipe Directions for Wholesome breakfast muffins

  1. Combine milk, lemon juice, corn syrup, melted butter, eggs, nuts, bran, and flax in a bowl.

  2. Sift together dry ingredients and add to moist mixture. Add bananas and cranberries only enough to moisten.

  3. Fill muffin cups (18) and bake at 350 to 375 for 15 - 20 minutes depending on your oven.

  4. (stirring by hand works very well for this recipe)
