Recipe Ingredients for wholemeal pancakes

1 cup flour, Wholemeal Plain
1/2 cup rolled oats
1/2 cup raw polenta
2 tsp baking powder
3 egg whites
3 tbs canola oil
8 tbsp maple syrup
1 3/4 cup water
150 g canadian bacon, fat trimmed (6slices)

Recipe Directions for wholemeal pancakes

  1. ? Combine flour, oats, polenta and baking powder in a medium size bowl. Add a pinch of salt, stir to combine, then set aside.

  2. ? Beat egg whites using an electric beater until frothy but not stiff. Add oil, cup maple syrup and water and mix thoroughly.

  3. ? Pour egg mixture into flour mixture and mix until just combined.

  4. ? Heat a large non-stick frying pan over medium-high heat. Spoon 2 tbs of the pancake batter into the pan and cook for 2 minutes, or until bubbles appear. Flip pancakes over and cook for a further minute, or until golden. As you finish each batch of pancakes, transfer to a baking tray covered with foil and heat in a 120C oven. Repeat with remaining batter.

  5. ? Spray same non-stick pan with oil and place over medium-high heat. Add the bacon and cook for 2-3 minutes each side, or until golden and crisp.

  6. ? Stack 4 pancakes onto each plate and serve with a rasher of crisp bacon. Drizzle with remaining maple syrup and serve.

  7. Notes

  8. ? These pancakes are best made just before serving. The batter can be made a day ahead of time and stored in an airtight container in the fridge. The batter may thicken slightly, so either add a little extra skim milk or water and re-mix until smooth
