Low Fat High Fibre - and i feel like i've had a real cake!

Recipe Ingredients for Wholemeal Banana Muffin

30 ml canola oil
60 g Clear Honey
1/2 tsp Vanilla Extract
2 large Bananas
150 g Wholemeal Flour
1 tsp Baking Powder
1/2 tsp Bicarbonate of soda
1/2 tsp Cinnamon
1 pinch of Salt

Recipe Directions for Wholemeal Banana Muffin

  1. Melt butter (replaced with canola oil), honey and vanilla over low heat. Leave to cool for a few mins

  2. Mash Bananas in a bowl

  3. Measure out flour, raising agents, cinnamon and salt

  4. Mix melted butter with banana

  5. Mix into dry ingredients. DO NOT OVER MIX! A lumpy muffin mixture is always good sign

  6. Bake at 190 deg for 25mins
