Recipe Ingredients for Wholemeal Banana & Apple Muffins

4 oz (wholemeal) flour
2 tsps baking powder
2 tablespoons oats, rolled
2 tablespoons (dark brown) sugar
1 tsp cinnamon
1 tsp caraway seeds
1 egg, beaten
1 tablespoon oil
2 tablespoons yoghurt
4 tablespoons (approximately) milk
3 oz apple, puree or grated
1/2 banana, chopped

Recipe Directions for Wholemeal Banana & Apple Muffins

  1. Preheat the oven to Gas 6 and line a muffin tin with 6 paper cases.

  2. Measure the dry ingredients and spices into a mixing bowl

  3. Whisk together the egg, oil, yoghurt and milk and add to the dry ingredients along with the fruit

  4. Combine roughly with a fork, leaving the mixture a little lumpy with a few streaks of flour

  5. Spoon the mixture into the cases

  6. Bake for 20 - 25 minutes and serve fresh from the oven
