Made with wholemeal flour, topped with nuts

Recipe Ingredients for Wholemeal Apple muffins

2 apples, chopped
1 tsp lemon juice
130 g wholewheat flour
2 eggs
57 g canola oil
20 g splenda
70 g soft brown sugar
18 g walnuts
1 tbsps brown sugar
100 ml skim milk
1/2 tsp salt
170 g applesauce

Recipe Directions for Wholemeal Apple muffins

  1. mix all dry ingredients together, whisk eggs sugar &oil together. Add applesauce and mix

  2. add dry ingredients and whisk, adding milk to loosen mixture.

  3. mix in chopped apple.

  4. chop nuts, mix with tbsp sugar.

  5. place mixture in greased muffin tins, top with nut & sugar mix

  6. Bake for 20- 25 mins at 200C or gas mark 6.

  7. Place on cooling rack & store in airtight container in fridge
