Healthy muffin recipe using non-processed ingredients.

Recipe Ingredients for Whole wheat zucchini muffins

3 c white whole wheat flour
1 T cinnamon
1 1/2 t baking soda
1 t salt
3 eggs
3/4 c coconut oil
3/4 c honey
1 t vanilla
3 1/2 c grated zucchini

Recipe Directions for Whole wheat zucchini muffins

  1. Preheat oven to 325 degrees F

  2. Prepare 2 regular muffin pans (I had enough batter left over for a couple muffins beyond that and used some ramekins)

  3. Blend dry ingredients

  4. Pour in eggs, oil, applesauce and vanilla. Stir until just blended. Don't overmix.

  5. Fold in the grated zucchini.

  6. Place in muffin cups

  7. Bake regular sized muffins for 15-20 minutes.

  8. Mini muffins about 10 minutes.
