YUMMY VEGGIE PIE WITH WHOLE WHEAT CRUST YOU CAN SUBSTITUTE OR OMIT VEGGIES TO YOUR TASTE.

Recipe Ingredients for WHOLE WHEAT VEGGIE PIE

1 cup wheat flour
1 cup all-purpose flour
2/3 cup shortening
5 tablespoons cold water
1 cup chopped zucchini
1 cup chopped celery
1/2 cup carrots, shredded
1/2 cup sliced mushrooms
1/2 cup chopped green pepper
1 clove garlic, minced
2 tablespoons olive oil
15 oz tomato sauce
1/2 cup green beans
1/2 cup corn
1 tablespoon brown sugar
1 teaspoon oregano
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon allspice
1/4 teaspoon pepper
1 cup light cheddar cheese

Recipe Directions for WHOLE WHEAT VEGGIE PIE

  1. SIFT FLOURS AND 1/2 TSP SALT.

  2. CUT IN SHORTENING TILL CRUMBLY SPRINKLE WATER 1 TABLESPOON AT A TIME, TOSSING AFTER EACH ADDITION, FORM INTO 2 BALLS.

  3. ROLL PASTRY TO 1/8 INCH THICKNESS. FIT INTO A 9 INCH PAN.

  4. IN SKILLET, ADD 2 TABLESPOONS OLIVE OIL COOK ZUCCHINI, CELERY, CARROTS, MUSHROOMS, GREEN PEPPER AND GARLIC, COOK UNTIL SOFTENED.

  5. ADD TOMATO SAUCE, BEANS, CORN, BROWN SUGAR AND SEASONINGS.

  6. SIMMER UNCOVERED FOR 5 MINUTES, THEN SPOON INTO SHELL.

  7. SPRINKLE WITH CHEESE.

  8. ROLLOUT REMAINING PASTRY FOR TOP CRUST, SEAL EDGES AND CRIMP.

  9. CUT HOLES INTO CRUST TO LET OUT STEAM. COVER EDGES WITH TINFOIL OR CRUST COVER.

  10. THE TOP CAN BE BRUSHED WITH A LITTLE MILK OR EGG AND MILK MIXTURE.

  11. BAKE AT 350 DEGREES FOR 20 MINUTES, REMOVE FOIL OR COVER AND COOK FOR 25 - 30 MORE MINUTES SERVES 6 TO 8 PEOPLE YUMMY
