Soft, sweet, and vegan! These muffins are the cutest little dark things. There's minimal sugar and oil. Also, don't worry about them rising too much. They will puff, but not overflowing! Recipe Ingredients for Whole Wheat Vegan Sweet Potato Banana Maple Muffins

1 1/2 cup whole wheat flour
1 cup sweet potato, boiled, skin on
2 tsp baking powder
1 tsp baking soda
2 tbsp cinnamon
1/4 cup dark brown sugar
1/4 cup maple syrup
1/2 cup mashed banana
1/4 cup canola oil
1/2 cup water

Recipe Directions for Whole Wheat Vegan Sweet Potato Banana Maple Muffins

  1. Preheat the oven to 350 degrees.

  2. Spray a 12 cup muffin pan with nonstick spray.

  3. Mash sweet potatoes and bananas to a mushy texture with few lumps.

  4. Mix together sweet potatoes, bananas, dark brown sugar, maple syrup, canola oil, and water.

  5. In a separate bowl mix together WW flour, baking powder, baking soda, and cinnamon.

  6. Add the wet mixture to the dry. Don't over mix!!!

  7. Spoon batter evenly into muffin pans.

  8. Bake for 18-25 minutes. (21 minutes approx.)

  9. Cool for 10 minutes.
