A whole wheat, low sugar version of your favorite muffins. You can substitute any fruit/nut combo. Try orange cranberry, banana walnut, etc...

Recipe Ingredients for Whole Wheat Tropical muffins

2 cups whole wheat flour
1/2 cup splenda
1 banana
2 tsp baking powder
1 egg
1 tsp vanilla
1/2 cup shredded coconut
1/2 cup macadamia nuts
2 tbsp orange zest
1 1/2 cup light soy milk

Recipe Directions for Whole Wheat Tropical muffins

Preheat oven to 375 degrees. Combine flour, splenda and baking powder in large bowl. In separate bowl, combine egg, soy milk, and vanilla. Mix until just blended. Add orange zest, one chopped banana, and macadamia nuts. Line muffin pan with baking cups. Distribute evenly among each cup. Cook until a toothpick comes out clean (approximately 20 minutes).
